This 3-A Sanitary Standard applies to the sanitary aspects of scraped surface heat exchangers for adding heat to, or removing heat from products. This standard does not apply to freezers for ice cream, ices, and similarly frozen dairy foods nor to batch processors. Product enters the heat exchanger at the inlet connection and exits the heat exchanger at the outlet connection and does not include external valves or piping.

To conform to this 3-A Sanitary Standard, scraped surface heat exchangers shall conform to the following criteria for design, materials of construction, fabrication techniques and installation, as applicable, and the current revisions or editions of all referenced documents cited herein.
