Kitchens and associated areas are special rooms in which meals are prepared, served and distributed, and where tableware and equipment are washed and food is stored.
This standard provides information on the ventilation and air-conditioning of commercial kitchens and associated areas and on the design and construction of ventilation and air-conditioning systems. It applies in conjunction with DIN EN 16798 and the series of standards DIN 18869.
This standard does not apply to domestic kitchens and small commercial kitchens with a total connected load of less than 25 kW for the appliances releasing heat or humidity (e.g. steamers, dishwashers). An air extraction system is recommended if the total connected load is less than 25 kW.
The regulation DGUV 110-002 (formerly BGR 111) shall be observed in any case.
In order for the task described to be performed, air supply and extraction systems shall be so installed in the kitchen areas that
• odours, air pollutants and humidity are removed,
• impacts on rooms not forming part of the kitchen area are avoided, and
• the supply or inflow of hygienically critical air is prevented. Kitchens for different units shall have independent air extraction systems.
Particular importance is to be attached to aerosol separation from the extract air. A test procedure for providing a uniform assessment of such equipment is therefore described in DIN 18869-5.
