scope:
The actual brewing process and the bottling and filling process are the most important parts of the overall beer production process. These processes are the major energy and water consumers. This standard focuses on the process steps "mash and wort production", "fermentation", "lagering", "filtration and bottling/filling", including all the necessary pre-production processes such as disinfection and cleaning. Furthermore, it also addresses the topics of energy supply and provision of refrigeration.
The "malt preparation" process has not been included since very few breweries in Germany still have an in-house malt production.
