This Standard specifies requirements for the design andmanufacture of mincing machines (see Figures 1a and 1b) used in astationary position. The machines covered by this European Standardare used for size reduction of fresh or frozen meat, meat productsand fish (hereinafter referred to as product) by cutting in a setof cutting tools. Mincing machines for domestic uses are notincluded in this European Standard. Filling mincers are covered byEN 12463 ?Food processing machinery ? Filling machines andauxiliary machines ? Safety and hygiene requirements?. ThisStandard applies only to machines that are manufactured after thedate of issue of this European Standard. Mincing machines inconnection with using a hold-to-run foot switch are not covered bythis European Standard. This Standard covers: ? mincing machinesused in shops and preparation rooms; ? mincing machines used inkitchens where sausages are prepared; ? mincing machines usedindustrially; ? accessories. The extent to which hazards arecovered, is indicated in this European Standard. For other hazardswhich are not covered by this European Standard, machinery shouldcomply with EN ISO 12100:2010 where applicable. This Standard isnot dealing with specific requirements for the control of mincingmachines with foot switch.
