This standard is concerned with the emissions and the opportunities for controlling emission from installations for cooking and heat-treating foods, specifically installations for fish and meat processing in accordance with 4. BImSchV (4th ordinance under BImSchG (Federal Immission Control Act)). This standard's applicability to fish industry installations not covered by this ordinance owing to their size depends on the specific emission control measure and is precisely explained at the appropriate point.
Smoking installations fall within the scope of standards VDI 2595 Part 1 and Part 2, respectively.
This standard contains a brief description of the production processes for the main product groups of fish and meat products. The measures employed for emission control are described and critically assessed.
The measures given in Section 6.3.2 to Section 6.3.8 are only to be applied in kitchens if odour nuisance is expected or has occurred. Finally, the standard provides information on achievable emission control rates and on the sampling and measuring equipment to be used.
