This International Standard specifies a method for the determination of the Scoville index of chillies, whole or ground, unadulterated by other spices or products. This standard covers a method for investigating the greatest dilution at which the stimulus treshold (see ISO 5492) of the pungent sensation can be determined. Details the reagents and apparatus to be used, the procedure, expression of results and the data to be included in the test report.
