This standard describes a method for the determination of the iodine value of butter fat according to the method of Wijs. The iodine is a measure for the unsaturated fatty acid content of the fat. The standard applies to examination of the fat components obtained from butter according to NEN 3703 and of butter fat sampled according to NEN 3704.
