scope:
This standard includes every kind of foodstuff production, storage, transport, serving and disposal, which is not included by production in communal kitchens. Furthermore, the standard specifies procedures for the selection of material, cleaning and maintenance of working and serving utensils as well as technical devices. The standard does not cover gavage and intravenous alimentation.
