scope:

The purpose of the project "Fresh fish - Quality in retail trade" has been: - to identify the consumers' demands on fresh quality fish; - to determine criteria for quality of fresh fish and testing these in consumer surveys; - to establish an updated picture of the retail trade as regards quality activities and conception of quality as well as any barriers that may exist to offering the customers fresh fish of high quality. Furthermore the role and the activities of public control are discussed. This analysis has been made possible through a cooperation with The Association of Danish Fish Retailers.
