Applies to raw and processed liquid milk, partly skimmed milk and skimmed milk in which no appreciable separation or splitting of fat has occured. The method specified is based on the Röse-Gottlieb principle consisting in extracting an ammoniacial ethanolic solution of a test portion with diethyl ether and lightpetroleum, removing the solvents by distillation or evaporation, and determining the mass of the substances extracted which are soluble in light petroleum. The annex includes the description of an alternative procedure using fat-extraction tubes with siphon or wash-bottle fittings.
